Lily: Oregon Zoo’s new baby elephant

There’s been a lot of excitement in downtown Portland, Oregon over at the Oregon Zoo! At the end of November one of the Oregon Zoo’s Asian elephants gave birth to a baby girl named Lily. Lily was born on November 30th at 2:17 AM weighing over 300 pounds! I haven’t gotten a chance to see her in person, but I have some photos that the zoo was kind enough to share with everyone. Hopefully we will get to go see her soon. It’s pretty cold in Portland right now, so we are waiting until the zoo increases the time to see her. Right now you have to wait in line and then you get five minutes with her. I think it won’t be long before she’ll be more available to the public. In the meantime I hope you enjoy these photos.

Trader Vic's is a ultra fun restaurant in downtown Portland in the Pearl District.

As you can see from the many pictures they have great food and a fabulous Maui Mai Tai.

Like many of the restaurants you find in the Pearl District, Trader Vic's has an excellent happy hour everyday from 4 - 6:30 PM and 10 - close. On their happy hour menu you will find ribs, crab rangoon, calamari, caesar salad, and lots of other fun bites.

The last time we went I had all three kids with me, so I was unsure if we would be able to take advantage of the happy hour menu. They actually sat us in the lounge area, not at the bar, but in that area. We were able to order happy hour no problem. You can see the caesar salad and the calamari in this last photo.

Blueberry Cinnamon Roll Crumble



Blueberry Cinnamon Roll Crumble
Every Christmas I like to make something special for breakfast. By special I mean I make something instead of having the kids eat cereal. This year instead of making eggs and bacon or waffles, I decided to go all out and make a real treat. I call it Blueberry Cinnamon Roll Crumble.  Adapted from the Lady Behind the Curtain's recipe: Cinnamon Blueberry crumble. I didn't really change a whole lot, but I've never used the type of cinnamon rolls she mentions and based on the amount of blueberry pie filling I thought I could actually make way more and I did, three times more!

Blueberry Cinnamon Roll Crumble

2 cans Pillsbury cinnamon rolls 8ct.
1 large can blueberry pie filling
1/4 cup softened butter
1/2 cup flour (or yellow cake mix)
1/2 cup brown sugar
1/2 cup chopped pecans
1-2 packets of icing


Grease a baking dish large enough to hold 16 cinnamon rolls. Cover the cinnamon rolls with the pie filling. In a separate bowl mix the softened butter, flour, brown sugar, and pecans. Once mixed shake out over the pie filling. Bake at 350 degrees for 40 minutes or until the cinnamon rolls have completely cooked. Once it's done top it with the icing that came with the cinnamon rolls.

I decided to make this breakfast casserole for Thanksgiving morning, but instead of using blueberry I used Strawberry pie filling. It was just as good.
