Zuppa Toscana Copycat Recipe

Olive Garden has a soup I love, Zuppa Toscana, and it's surprisingly easy to make. This is a copy cat recipe for Olive Garden's Zuppa Toscana.
Zuppa Toscana

1 lb. ground Italian sausage
2 large russet baking potatoes, cut up
1 large onion, chopped
1/4 c. bacon bit (optional)
2 garlic cloves, minced
2 c. kale, chopped
16 oz. cans chicken broth
1 quart water
1 c. heavy whipping cream

Brown sausage in a skillet. In a large pot combine cooked sausage with all the other ingredients, except the heavy whipping cream and kale. Simmer until potatoes are soft. Once the potatoes are soft stir in the heavy whipping cream and chopped kale. Let simmer 5 more minutes, then serve.

Washington Park Playground

Washington park is a beautiful large park in downtown Portland that has a handicap accessible playground. It's also home to the Oregon Zoo and the International Rose Test Gardens.

Oba! A Latin Restaurant in the Pearl District

Our family loves Oba! Located In the Pearl District at 555 NW 12th Ave. next door to Trader Vic's. we've only been here for happy hour. Our original plan was to have dinner here in the dining room, but we sat in the lounge first and ordered. What came out was good and drinks so good that we've still never set foot further than the lounge.

What makes Oba even better is that your kids can sit with you in the lounge too. Making their happy hour one of the most family friendly in Portland.

Here is some of what we ordered.

Corn dip $9
skewers (overpriced)

cesar salad $5
Patatas Bravas - $5

2 tacos $5 and these tacos were ridiculously good. Probably some of the best found in Portland.
Nachos $8
Mango Mojito $6.50
Citrus Flan and yes it was as good as it looks here.
